The washing process follows a traditional method but incorporates a unique twist. Lenis extracts all the lixiviates from the cherries after draining them for three days and ferments the juice with yellow fruits, such as passion fruit and pineapple, along with sugarcane. This fermented juice is then reintroduced to the coffee after pulping, where it ferments for an additional two days. Finally, the coffee is washed with pristine spring water, placed on African drying beds, and dried for 13 to 15 days, resulting in a process that enhances complexity and flavor clarity.
