El Silencio farm, owned by Jailer Plazas, represents four generations of
coffee production tradition. Located in the village of La Esmeralda, Huila, it
sits at an elevation of 1,555 meters above sea level. This farm cultivates a
diverse array of coffee varieties, including Castillo, Colombia, Pacamara,
Pink Bourbon, and Gesha, all of which are highly regarded for their quality.
Moreover, El Silencio farm is a frequent winner of the Cup of Excellence (COE)
Colombia.
The coffee from this farm is characterized by its complex and captivating
flavor profile. In cupping, the flavors of white wine, kiwi, and blueberry
stand out. The elegant and refined acidity reminiscent of white wine, the
refreshing sweetness of kiwi, and the fruity flavor of blueberry are

Crisply sweet-tart. Dried plum, baking chocolate, lemon zest, thyme, cane sugar in aroma and cup. Brisk, sweet acidity; full, syrupy mouthfeel. Gently crisp finish with notes of baking chocolate and lemon zest.
