An exclusive LOT directly imported by SÖT. Finca Chambaku is located near Manizales, Caldas in the central mountain range of the Colombian Andes, part of what is known as the Colombian Coffee Triangle. This high-altitude region features dramatic ridgelines, steep terrain, volcanic soil, and a climate ideal for growing high-quality coffee.
The farm is one of 17 plots that make up Hacienda El Jardín, which is owned and operated by the Restrepo family. Founder Elmer Restrepo has been working with coffee for over 40 years, and his knowledge and passion have been passed down to his son and current co-owner, Juan Felipe.
The farm is committed to sustainable practices, using organic fertilizers and natural water sources, while supporting both its workers and the local community. Parts of the land are preserved as natural forest to protect native wildlife.
Juan is the designer of the farm’s processing protocols and is known for his adventurous and detail-oriented approach. The farm is equipped with modern facilities including a dedicated fermentation lab, allowing him to innovate and refine unique post-harvest methods.
This Pink Bourbon "April" lot is processed using culturing fermentation, a method that combines fruit and selected yeast cultures to trigger complex metabolic reactions during fermentation. The result is a vibrant, fruit-forward profile with pronounced notes of peach and tropical fruits, offering a cup that is both expressive and memorable.
